What is Honey?
Honey is a natural, sweet, and often medicinal food made from the nectar of flowers. Honey is only made from the Honeybee through a process of regurgitation. Honeybees consume the nectar, regurgitate it and pass it on to the next honeybee. Through this process, the water content is reduced in the nectar to then form honey!
When honeybees are in the process of making honey from nectar, they store it in the honeycomb cells inside their hive. Once the nectar has been fully converted into honey, the honeybees will seal that honeycomb cell with beeswax. This is how us beekeepers gauge how much honey a hive has made during the Summer Honey Season.
How do honeybees make different flavours of honey?
Because honey is made from the nectar of flowers, the different varieties of nectar are what determines the flavour of honey. For example, to make Clover Honey, a beekeeper will place their hives in an area that is dense with Clover flowers. This can be said about any and every type of honey.
Different varieties of flowers and their respective honey have differing benefits and medicinal properties. Mānuka Honey, which is made from the nectar of the Mānuka Bush (Leptospermum Scoparium), is the most researched honey for its medicinal qualities and benefits.
